Sea Bass & Sémillon

Mouthwatering aromas are released when sea bass is married with ginger, red chillis, spring onions, lemon grass, garlic and soy sauce.

The firm, meaty, buttery flavour and texture of this subtly sweet and exquisite fish works to perfection with these oriental elements. However, given these strong flavours, white wines from Burgundy and Loire are perhaps not the obvious match with these ingredients.

There is a need for a wine with a smidgeon more opulence, a tad punchier, with a balance of flavours that can easily sit alongside a recipe of this intensity.

Flavours of citrus, notes of green apples, hints of figs with a well defined texture that has a beeswax component aligned with a light touch of herbs, provide a richness and strength that works to perfection with this dish. There is a clever balance of fine acidity sitting alongside an almost creamy texture that has length and concentration. Expect it to evolve and gain additional complexity over the next five or more years.


Also, rather good with hard cheeses and nuts.
